Central Market is gearing up for its annual Hatch Chile Festival with a recipe contest, pork tenderloin sandwich classes, and a new chile-themed cookbook starting August 17. The festival, which spans two different weekends, celebrates the arrival of more than eight truckloads of the chile from Hatch, New Mexico. The festival runs Friday, August 21 through Sunday, August 23 and Friday, August 28 through Sunday, August 30. Breeding pigs for their meat is one of the local's sources of income, these pigs are well fed and their meat is succulent and quite delicious. Among the pork dishes you should expect to see in restaurants are: baked ham, stewed down pork chops, roast slow cooker pork roast with diamonds of crackling and other dishes. One of the pork dishes you should try is Pudding and souse. It is made of pig intestines stuffed with sweet potatoes; the souse is boiled down trotters and pig head. It is one of the island's main dishes. If you want roast pork to give your decoration a modern outlook you can draw an outline on the pumpkin and carve it out in the respective shape. A stencil and a transfer tool can do the job for you. The life span of a pumpkin can vary from a day to week. You can add more creativity by coloring the pumpkin or monogramming it. Egg yolks may taste great but they also contain 2335mg of cholesterol per 100 grams. However, this should not scare you from eating eggs, because the egg yolk contains most of the nutrients in an egg. Eating a few eggs per week pork fillet is fine. Your centerpieces can be made with the purchase of dollar block florist foam. Simply wrap the base with some gauze and insert the stems of brightly colored fall leaves. Put it into a large bowl. Continue to process all the rest of the chunks of meat until you have all the meat ground up. Remember, keep the chunks of meat semi-frozen because the food processor cannot process the meat unless it is semi-frozen. You may want to place some pieces back into the freezer for a few minutes. Once all the meat is ground, take about 1/2 lb of the meat and place into a sandwich bag. Do this to all the meat. Plan your meals in advance and shop for what you need. So that you've always got something that's easy to put together for a healthy, tasty meal. Things like chicken breasts, pork fillet, salmon steaks. Have a selection of veg in your freezer; potatoes, rice (brown or Basmati), wholewheat pasta, and couscous in your pantry and you have the basis of several easy, healthy meals. Use spices and herbs for flavour as opposed to salt.
