The 4th annual Taste of Wisconsin Dells did not start off with the best of weather, despite the fact that the fest is held in early June. Temperatures hit below 50F, with the wind and rain making things seem even colder.
Rival makes a smaller crock pot but I like cooking extra to allow for leftovers the following day. I especially love the crock pot on hot days because I don't have to stand over a stove to make a nice meal. At night, I just throw in the ingredients of the dish, then select "low" to cook. In the morning, the dish is prepared and I can then set it on "warm" to keep throughout the day, leave it on "low" to cook a little longer, or place it in the fridge and warm it back up later.
Eat a healthy meal before that fits your nutritional plan. That means protein, fiber, healthy fats, and water. For example, salmon with sweet potato and broccoli.
As far as food is concerned, there is no substitute. The chicken falls off the bone, and the brisket melts in your mouth, but the real prize of the kitchen, is the slow cooker pork ribs. Rubbed simply in salt and pepper, these ribs are smoked to perfection, the meat barely hanging on to the bone. Ordered as a plate meal, the ribs pair wonderfully with rice and pinto beans and a glass of homemade lemonade. After a bowl of banana pudding for dessert, be sure to order a slab of ribs to go before paying the check.
Some of them come with a splatter shield that rests around the base of your grill. It collects all fat so that it does not spread to the counter and walls. You can never go wrong with the Elephant Bar specials. There specials change all the time. Just ask for the special and you will get a great deal. The special platters are usually $10.99 or so and are a great deal. I remember getting bbq ribs once and they were great! The meat was juicy and tender, and the sauce they used on it must have been created in heaven. Every bite brought me exquisite delight. I must say those were some tasty ribs. The Spaghetti at the Elephant Bar is also Excellent.
Take ribs out of tupperware and either brown in a pan on the stove, or under the broiler for 10-15 minutes. While the meat is browning and forming a thin crust, pour the remaining marinade into the slow cooker pork ribs cooker.
Day before: Mix Kosher salt, black pepper, Garlic powder, Onion powder, and Cayenne pepper and set aside. Mix BBQ Sauce and Apple sauce together in separate bowl and set aside. Place chicken on a double layer of heavy foil. Rub with dry spice mix make sure to rub all sides. Pour about half the sauce over chicken. Close foil up tight and place in a dish...place dish in the refrigerator over night. Mix remaining spices with reserved sauce cover and refrigerate. Next day preheat grill to Med-High heat. Place foil wrapped chicken thigh packet on grill for ribs hour turning every 15 min. After one hour remove chicken from foil and place directly on grill. Baste with the reserved sauce spice mix. Turn and baste frequently. 30 min.
Line your slow cooker with a slow cooker bag (this will make clean up so much easier). Place the thawed beef roast into the cooker. Chop up enough carrots, celery and potatoes to feed your family and toss them into the slow cooker and arrange them around the roast. Sprinkle the onion soup mix over everything. Add in a few shakes of the salt, pepper and Worcestershire sauce and then drop in a couple of spoonfuls of butter. Cover and let everything cook in the slow cooker on low for eight hours or on high for six. Once the roast is done cooking, slice it up and serve, with the vegetables acting as the side dish. Enjoy!
